How does distillery equipment work in a high – altitude area?

The process of distillation is all about separating different components of a liquid mixture based on their boiling points. We start with a fermented liquid, which is like a blend of alcohol, water, and other stuff. Then, we heat it up in a still. As the liquid heats, the alcohol, which has a lower boiling point than water, turns into vapor first. This vapor rises up and is then cooled and condensed back into a liquid in a condenser. That’s the short version of how it works.

But when we take this setup to high – altitude areas, things get a bit different. The main factor that messes with our distillation process up there is the lower air pressure. At higher altitudes, the atmospheric pressure is lower than at sea level. You might be wondering, "So what? How does that affect distilling?" Well, it has a big impact on the boiling points of liquids.

When the air pressure is lower, the boiling points of liquids also decrease. At sea level, water boils at 100°C (212°F), but at an altitude of about 3000 meters (10000 feet), water boils at around 90°C (194°F). Alcohol is affected in the same way. This means that in a high – altitude area, the fermented liquid in our still will start boiling at a lower temperature than it would at sea level.

This change in boiling point can be both good and bad. On the plus side, we don’t have to heat the liquid as much to get the alcohol to start vaporizing. That can save us some energy costs. For example, some of the unwanted compounds that would normally stay in the liquid at sea – level boiling temperatures might start vaporizing along with the alcohol at high – altitude boiling temperatures.
